This is all done in your options menu, from the Title.
Environment Detail: High
Lighting Detal: Medium/Low
Shadow Detail: Low
Specular Effects Detail: Disabled
Terrain Resolution: High
Terrain Texture Size: Medium
Water Detail: Medium
Detail Objects: High
Object Detail: Gugh
Object Texture Detail: High
Animation Detail: Medium/Low
View Distance: Medium/Low
Overhead Camera Distace: N/A (doesn't matter)
Anti-Aliasing: Disabled
Font Shadow: Disabled
Font Texture Detail: Enabled
Shader Detail Quality: Medium/Low
Resolution: 1024 x 768 x 16 OR higher, if your comp can handle it.
This will make 90% of computers run the game better and with better graphics. If after building a very large zoo; your PC can still handle everything, you can consider bumping up the Animation Detail and turning on Font Shadow.
